Tasting Notes
A well-structured yet approachable Merlot displaying notes of dark berries,
plums, and subtle spice. The palate is smooth with soft tannins and a
rounded mouthfeel, offering depth, balance, and an elegant finish.
Winemaking Practice
Merlot grapes are harvested at optimal ripeness to ensure concentration of
flavor and soft tannin development. Following destemming and crushing,
fermentation takes place on the skins to extract color, flavor, and structure.
Gentle pump-overs are used to achieve balanced extraction while maintaining
the wine’s smooth character.
Once fermentation is complete, the wine is pressed and matured in Oak
barrel to retain fruit purity and freshness. This approach allows the Merlot’s
natural softness and dark fruit profile to shine. Prior to bottling, the wine is
carefully refined and filtered to ensure clarity, stability, and consistency in
every bottle.

A smooth, fruit-forward Sweet Shiraz with inviting aromas of ripe berries and
plums. The palate is soft and rounded, offering a balanced sweetness with a
gentle finish that makes it highly approachable and enjoyable.
Winemaking Practice
Grapes are carefully hand-harvested from cooler-climate vineyards in
Stellenbosch to preserve natural fruit intensity and freshness. After
harvesting, the grapes are destemmed and gently crushed before
fermentation begins on the skins using selected yeast strains. Fermentation is
closely monitored and allowed to progress until the desired balance between
alcohol and natural sweetness is achieved.
At this stage, the wine is pressed off the skins and transferred into stainless
steel tanks, where cooling is applied to naturally halt fermentation and retain
residual sweetness. The wine is then clarified, refined, and sterile filtered prior
to bottling to ensure purity, stability, and a clean, polished finish.
